Laura De Parri’s Cerrosughero Farm is located in the Viterbo area, in Canino. This agricultural and touristic estate has achieved fame above all thanks to the production of high quality extra virgin olive oil.
Situated in the heart of the Tuscan-Lazio Maremma, the plants grow on a land of volcanic origin, rich in limestone and tuff rock, enjoying a particularly favorable microclimate. The oil obtained from the over 5000 plants, which are cultivated following traditional methods, is delicate and elegant.
Laura De Parri left her beloved Rome to move to Canino and manage the company, and her passion for this world has remained unchanged over the years. The daily commitment and the desire to invest in innovation have led the family oil mill to become an outstanding reality on the national scene, able to offer a real gourmet excellence. This has covered the oil-tasting room walls with numerous awards.
While the PDO Canino, dated 1999, represents the company’s first label, the company has added a bottling plant, an oil mill and a store over the years. The olives are pressed within a few hours of being harvested. The mill is equipped with a disc crusher and closed malaxers, and it works by keeping the temperature below 26°. Storage takes place in stainless steel tanks, kept in temperature-controlled environments. The oil has a definite and ample aroma, with hints of artichoke, thistle and chicory, and it is elegant and enveloping on the palate. Rosemary and mint are the most prominent elements, but there are also pleasant spicy notes. If Laura represents the reference figure for oil production, her brother Roberto manages the reception of guests in the four farmhouses. Indeed, the Cerrosughero Farm, is also a farmhouse with a restaurant and several accommodations options, ideal for a holiday surrounded by nature.
