Fattoria di Fubbiano
Fattoria di Fubbiano, engaged in the production of extra virgin olive oil and wine, is located in Capannori, a town in the province of Lucca, between Tofori and San Gennaro. The estate covers about 45 hectares, taking advantage of the presence of the Lucca hills, rich in minerals, and the protection that the same hills offer from the wind. The olive trees and vines can benefit from a mild climate at any time of the year, conditions which are positively reflected in production. The fact that the farm's Haflinger horses are allowed to graze freely in the olive groves is also a positive factor, as it ensures that the soil is properly fertilized and, moreover, is completely natural;
The results in terms of quality are evident, especially in the PDO extra-virgin olive oil.
At the basis of the activities carried out at Fattoria di Fubbiano, is the owners' desire to diversify the products, promoting the typical characteristics of the territory.
While harvesting is still done by hand, only physical and mechanical processes are used in the extraction process: this translates into a total absence of chemicals. In practice, the only treatment to which the olives are subjected is washing;
The superior quality oil contains 90% the cultivar Frantoio, and the remaining percentage is divided between the Moraiolo, Maurino, Leccino and Pendolino cultivars. The prevalence of the Frantoio cultivar guarantees a high content of polyphenols and tocopherols. Golden yellow in color, with very light green tones, this extra virgin olive oil surprises for its medium fruity flavor. A slight pungency and a marked sensation of sweetness are the other elements that have allowed the Fattoria di Fubbiano’s extra virgin olive oil to obtain excellent feedback from the public and the critics. The awards received both in Italy and internationally are proof of this.
