Pietro Intini has been in charge of the family oil mill . which is now almost 100 years old - since 1996. With his arrival in the fields and in the oil mill, Pietro brought along his desire to innovate, exalting the natural quality of local productions. Thus, besides traditional cultivation techniques, Pietro has added his continuous search for innovative solutions, capable of enhancing the fruits of his land even further.
The estate where Pietro grows and cultivates his olive trees is located in Alberobello, in the Murgia Barese. Each plant is cared for with painstaking attention, with a focus on quality. This continuous search for excellence is expressed in particular by his rigorous selection of the best raw materials.
Faithful to tradition, Pietro has opted for manual olive harvesting for his oil production. Within 24 hours of harvesting, the olives are transported to the oil mill and processed. The family oil mill has two continuous-cycle production lines. In this way, Pietro is able to create several different extra virgin oils, all with a very high level of antioxidants. Immediately after production, the oil is transferred into stainless steel tanks and stored in a protected atmosphere, so that its taste and olfactory characteristics remain intact.
In addition to the extra virgin olive oil obtained from organic farming and the various monocultivar and blend labels, Pietro also creates two special extra virgin oils. Two oils capable of expressing his desire to remain faithful to tradition, without having to forego innovation. The first is an extra virgin obtained only from pitted olives, and the second is an extra virgin olive oil the name of which evokes the ancient tradition of manual oil harvesting, naturally emerging from the olive paste, right after pressing, which has now been transformed into a delicate vacuum process.
