Dievole's 100% Italian extra virgin olive oil originates where the olive tree strongly expresses its sunny and generous essence in the quality and quantity of its fruit. Over 1000 hectares between Puglia, Basilicata and Sicily, farmed with passion and love; here, people’s experience goes back in time, in the memory of centuries-old olive trees generating, in harmony and balance, an extra virgin olive oil with a rich and intense aroma. The production line is characterized by a plant with reduced oxidative impact, able to preserve the oil present in the freshly harvested olives. Dievole works by modelling all the parameters according to the variety of olives and their state of health, the temperature, the degree of ripeness, the concentration of water and the sensory requirements to be found in the finished product. At the end of the extraction process, the oil is immediately filtered on cellulose panels in order to eliminate 99% of the water present and then stored in stainless steel, protected from light, at temperatures between 14 and 20°C in order to extend the product's shelf life. The bottling process also takes place under an inert atmosphere and in bottles that reduce the penetration effect of UV rays by up to 97%. The olives used to produce this oil come from Puglia and Sicily.
Tasting notes
Dievole's 100% Italian extra virgin olive oil is green in colour with golden hues. The aroma is fruity olive with aromatic notes of almond, cut grass and artichoke. Robust to the taste, with a medium-intense bitterness and a strong spiciness.
