I&P - Azienda Agricola Ione Zobbi was founded by Paolo. Born near Bologna, he decided to move and open his company in the Canino territory. Canino is located between the sea, a volcano and the Bolsena Lake. All these elements make the soil texture richer and affect the olive growth and ageing, thanks to the different microclimates.

I&P’s uniqueness is the choice of enhancing the Cru concept even in the extra virgin olive oil production; the different varieties are cultivated in specific venues. In particular, the company cultivates 6 varieties in 12 olive groves: Leccino, Frantoio, Maurino, Pendolino, Rosciola and Caninese; the latter is the typical local cultivar, and the company uses it to produce the 6 monovarietal extra virgin olive oils, cultivated in different venues characterized by diverse microclimates and soils.

A gem among Ione Zobbi extra virgin olive oil range, is surely the Forte & Eccelso; a limited edition produced every year with the best performing varieties.

Milling is done in the company oil press, within 3/4 hours from the harvest, through a two-step continuous cycle extraction to obtain a higher concentration of phenolic and aromatic substances.
