The love for his land and the work done in the mill allow Marco Viola - the beating heart of the oil mill that takes his name - to pass on stories through each bottle of oil produced: the Viola Sincero extra virgin olive oil is made exclusively from Moraiolo olives, in the San Eraclio di Foligno area, in the Umbria region, which is the oldest olive variety cultivated on the rocky hills of the Viola estate. This product fascinates us for the sincerity with which it expresses the characteristics of the territory it belongs to: as Marco says, a "Moraiolo monocultivar Il Sincero is a choice linked to the territory; secular plants of modest size linked to rocky and steep terrain, grown at 400 meters above sea level and are cultivated according to tradition. The rounded fruit is picked by hand from the vine in October, when it begins to ripen, giving life to an extra virgin oil of extraordinary intensity, which transmits unmistakable varietal sensations".
Tasting Notes
Viola Sincero oil is an intense limpid golden yellow color with greenish reflections; its aroma is definite and enveloping, with rich vegetable notes of artichoke, thistle, lettuce and spicy hints of green pepper. The mouthfeel is ample and full of character, with aromatic tones of mint and rosemary and an almond aftertaste. Bitterness and pungency are present and harmonious.
