Acetaia Giusti

Acetaia Giusti's history started over 400 years ago, in 1605, when the "Salsicciaia e Lardaioli" business (sausage and lard makers) was recorded for the first time by Giuseppe and Francesco Maria Giusti. One hundred years later, in 1700, Giuseppe Giusti's Gran Deposito di Aceto Balsamico started to get bigger, by purchasing barrels from several families from Modena.

In the early 1900s, Acetaia Giusti became the official supplier of the Royal House of the Savoia Family, and they were allowed to place the King's coat of arms on their bottles; thence, the company started growing at a fast pace, until it became what it is today.

The Giusti family is at the core of the company, and it has passed down the art of balsamic vinegar from one generation to the next; the Vinegar Master has always been a member of the family, trained from an early age.

Today, the tradition is carried on by Claudio and Francesca, who, together with Luciano, guide the company, keeping this century-old alive through artisan production systems, in conjunction with modern commercial and marketing methods, allowing the brand to be recognized internationally.

Today, Acetaia Giusti preserves a fully-fledged balsamic vinegar heritage: its attics still house 600 barrels dating back to the 1700s, and others to the 1800s, which are still used and masterfully managed throughout all processing phases.
