The first extra virgin oil is Accademia Olearia’s PDO Sardegna "Riserva del Produttore", an intensely fruity oil made from a blend of the Bosana and Semidana varieties. The clear olive aroma and the intense taste make it perfect for using on dishes with an intense flavour, such as game.
The second extra virgin oil is Fratelli Pinna “Antichi Uliveti del Prato", a 100% Bosana,monocultivar medium fruity oil Its complex, harmonious flavour is suited to being used crude on vegetable soups, fish and barbecued meat.
The third extra virgin oil is Accademia Olearia "Semidana", a medium fruity, monocultivar oil made from the characteristic Semidana variety. The oil’s medium intensity provides for a rather varied use. The flavour of the oil is especially well expressed to dress boiled vegetables or for cooking potato dishes.
