The love for his land and the work done in the mill allow Marco Viola - the beating heart of the oil mill that takes his name - to pass on stories through each bottle of oil produced: from the Moraiolo, Frantoio and Leccino blend of the Roviglieto and Scandolaro hills, the Viola Umbria Colleruita extra virgin olive oil is obtained. What we particularly like about this product, is its great character, with tones of thistle, artichoke and black pepper, which make it bitter and spicy in a strong way: a tasty oil that well reflects the spirit and typical Umbrian dishes.
Tasting Notes
Viola Umbria Colleruita oil is limpid, with an intense golden yellow color and delicate green nuances. The nose is ample and enveloping, rich in notes of artichoke and chicory, with clear hints of mint, rosemary and sage. The mouthfeel is complex and full of character, with tones of lettuce and hints of almond and cinnamon. Very strong bitterness and strong spiciness.
