Fratelli Pinna Bosana Olives in Brine. As soon as the olives are harvested in Fratelli Pinna's olive groves, they are cleaned of branches and leaves and selected by hand. They are immediately immersed in a solution of water, salt and lemon and must remain there for at least 30 days, changing the salt solution every 10 days. They are then washed in natural water and immersed once again in a saline solution for at least one year, repeating the washings every 2 months; only then they they are placed in jars with bay leaves, filled with water and salt and corked. They are thus ready for consumption. Sea salt. No allergens.
