Description

The One di Comincioli is more than a simple extra virgin olive oil; it is a project, born of the desire to create a unique blend from carefully selected, particular native Italian varieties. It is the result of a belief that has always been a constant in Comincioli: it is the Cultivar that makes the oil, together with the environment it comes from.
Every year, this oil will be characterised by a different varietal composition and by different Italian areas of origin, which is why the single cultivars used to make it will remain a “secret”.
The One di Comincioli is a limited edition and only very few bottles are made. Production takes place over 15-20 days, working 24 hours a day between October and November, in the veraison period.
The olives are at a pre-maturing stage and it is at this particular time that it is possible to obtain, with greater difficulty and extremely low production yields (between 5 and 9%), an oil that stands out for extremely low acidity and a high content in terms of vitamins and anti-oxidants.
The olives are selected exclusively by hand as only in this way, is it possible to obtain an oil of impeccable quality in organoleptic terms, because it is made exclusively from 100% healthy olives. The percentage of waste from this last year has been 30% for each day of work.
Using a stoner, in fact, the stones are completely removed without ever being broken because olive stones contain enzymes and tannins that can adversely affect both the duration and the polyphenol content of the extra virgin oil.
All successive stages in the production process take place indoors, without any contact with oxygen, thanks to the use of nitrogen and argon to protect the oil from any type of oxidation.
The advantage is an oil that can be used as an essence that - in just a few drops - can enhance the taste of dishes, from the simplest to the most complex, bringing out the full flavour.
Maximum performance with a minimum amount. A 500 ml bottle, used raw, can bring out the best of over 400
dishes as well as adding polypenols and vitamin E in extremely high concentrations.
As a guarantee of quality, on every bottle, as well as the table of nutritional facts, the label also contains the test results for acidity, oleic acid, peroxides, polyphenols and vitamins, as carried out by a highly qualified research laboratory.

The One di Comincioli is a fruit extra virgin olive oil with a bold character, feature bitter, spicy notes due to its high polyphenol and vitamin content. An oil with well-defined, distinctive aroma that leaves no oily or fatty sensation in the mouth.
