Monovarietal

Oil obtained from a single cultivar of olives.

Affiorato

Affiorato extra virgin olive oil, is also known as "Fior d’Olio", and is a particular type of extra virgin olive oil. It is obtained by spontaneous "affioramento", i.e. collecting by hand - using the specific ladles - the oil that forms spontaneously on the surface of the olive paste immediately after the olives have been milled. This type of oil forms a very small percentage (2-3%). Some believe it to be the excellence of all extra virgin olive oils, as it has not been processed in any way, as the oil simply emerges spontaneously. It is highly indicated during babies’ weaning stage and in children’s diets. It is a highly expensive oil as it takes many hours more to extract it (it is necessary to stop the machines and wait for it to emerge), and also as a very small percentage is obtained. This type of affiorato extra virgin olive oil does not undergo any extractive/separation force (either centrifuge or pressure). The waters or the olive pit are not involved in this production process when this method is used.

Organic

Product obtained from certified organic farming.

New

New oil and normal extra virgin olive oil produced in the same way as the remaining extra virgin oil, but it is the first extracted and it not filtered or decanted. It has a much-appreciated characteristic flavour and is cloudy in appearance.

Intense fruity

Intense fruitiness With the marked aroma of fresh fruit, apple, cardoon and artichoke, with a bitter, spicy taste. Ideal with barbecued dishes, aromatic vegetable dips and bruschetta, bean soup, boiled meats, stews, red meat and game, vegetable and legume soups, fried meat, pappardelle with hare meat sauce, stewed hare, pigs’ feet, steak and lamb stew

Light fruitiness

A soft, delicate oil, with light, not overpowering notes of spiciness and bitterness, with hints of walnuts, pine nuts and almonds. Its main note is sweet, with only a little bitterness and spiciness. Ideal with delicate dishes, boiled fish and dairy, to make sauces, salads and raw meat carpaccio, seafood and salted cod, seafood spaghetti, pesto pasta, seafood and pumpkin risotto, zucchini flowers, focaccia bread and pastries.

Medium fruitiness

An oil that tends to be more flavoursome, with a medium-intensity fruitiness, but is always harmonious, well-balanced, rounded and with fresh, clean aromas. Fresh olive fruitiness, grassy, with a slightly bitter and delicate taste. A spicy end note, also with a musky aftertaste. Perfect with pasta dressed with a white meat sauce, soups and fresh salads, salted meat carpaccio, boiled and grilled vegetables, aubergine bake, vegetable dip, fried freshwater fish, boiled legume and chickpea soups, sauces and broths, fish soups, fresh caprese salads, apple strudel.

Lightly textured foods

In this case, cooking the food must contribute to preserving the raw materials and must therefore be simple, steaming, salt-baking, en papillote. For example sliced lettuce and lamb's lettuce, potato or ricotta gnocchi, grilled vegetables, white fish fillets, boiled cereals, simple focaccia, and sauces such as mayonnaise.

Medium-textured foods

In this case, the type of cooking can be more incisive, but without going too far, therefore simple, in a frying pan, deep frying, baked. Food with stronger aromas, such as asparagus, oily fish, shell fish, buffalo mozzarella, salsa verde, legume soups, fish and meat carpaccio.

Foods with a more robust structure

Clearer, marked aromas, such as complex fish and vegetable soups, bitter salads, bresaola, radicchio and cabbage, baked pasta, tomato sauces cooked for several hours, pepper and artichoke dishes.

Bag in box

Flexible empty sac inside a rigid cardboard box fitted with a tap for delivering the content. It is the ideal container for oil. The outer box is more resistant to external knocks than a traditional tin, thus avoiding any accidental spills or leaks. The flexible vacuum sac protects the product from air and light, avoiding having to transfer the product and the practical tap provides for easy dosage of the desired amount without any drips.
