PDO Gaiatto “Tondello” extra virgin olive oil. Laghi Lombardi - Lario is obtained from olives of the Frantoio, Leccino, Bianchera and Pendolino varieties in smaller quantities. The olive trees are located at an altitude between 410 m and 460 m in the Podere Tondello di Perledo, the northernmost cultivation area in Italy. Here, the microclimate - even though the geographical position for the olive tree is extreme - allows a cultivation that favors the processing of noble elements such as oleic acid, in a very high percentage, a typical expression of excellence. We have chosen this oil because it represents the excellence of a territory that requires a lot of work and passion, and the oil produced expresses all this. The difficulties of working in an extremely difficult environment, which is not easily adaptable to mechanization, require a special commitment and dedication that it is no exaggeration to define as true love for one's own territory.
Tasting Notes
The nose is fruity with a medium intensity, with aromas reminiscent of green apple and cut grass. The pleasant notes of bitterness and spiciness are pleasantly persistent in the mouth, and are accompanied by inviting hints of fresh almond and artichoke that enhance its structure and personality. The color is yellow with green reflections.
