Mieli Thun's eucalyptus honey is a monofloral honey obtained from bees feeding on camaldulensis flowers, the best known in Italy and harvested in the Metapontina plain near Matera, in a completely unspoilt place that smells of history, culture and colours. Eucalyptus honey has a dark amber colour characterised by notes of liquorice, dried porcini mushroom, bouillon cube and dulce de leche. In the mouth, there is a perfect balance of sweet and salty, with slightly spicy overtones, making it an ideal ingredient for cooking.
