The Shimmering Lea Olives in Olive Gregori's 300g brine are a culinary treasure from the Marche region, derived from the Lea variety, a native olive from Piceno known for its rarity and challenges in cultivation. Harvested at the end of October when their color changes from green to pink-purple, these olives are processed using a traditional method that preserves their authenticity. The natural fermentation with lactic bacteria reduces their natural bitterness, making them ready to be enjoyed after 6-8 months in brine.
