Douce Vallée

Douce Vallée is a farm specialising in the production of fruit vinegars, nestled in the green forests of the Valdostane mountains at about 1300 meter of altitude, in the municipality of Chatillon. Founded in 1997, Paola Vittaz and her family began their journey by cultivating fields of blueberries, currants, blackberries and raspberries, later deciding to try processing some of the fruit.

Thanks to this idea, the company's first flagship products such as raspberry vinegar and the first jams were born, creating a line of genuine, top-quality products. Thanks to the experience and the desire to discover new flavours, a new factory was opened in 2015 with equipped, larger and more practical workshops for processing fruit into juices and jams with the aim of researching and experimenting with new combinations to be presented to the national and international market.

Thanks to the strong passion and dedication, vinegars characterised by a subtle balance of flavours and fragrances are created, almost all of which originate from the fermentation of fruit, not juice, aged in steel vats in contact with oxygen and left to ferment over time.

To date, the Douce Vallée company has managed to win over a large customer base by telling its story and its journey of constant research, commitment and passion to make special, high-quality products.
