It was 1979 when Michele di Gaetanodecided to leave Milan together with his wifeMarinamove to the province of Livorno to fulfill their dream: creating a farm. Fonte di Foiano's 1979 extra virgin olive oil bears the name of that year to celebrate this pivotal moment in the history of the Olive Mill. We like the product because it expresses the character with which these millers carry on their passion in their work: thanks to the variety of the Leccio del Corno cultivar, scents stand out that release their peculiarities to the mouth and nose to honor the historic talent of this family.
Tasting Notes
The Fonte Di Foiano 1979 oil is limpid, with a beautifully beautiful intense golden yellow color and greenish hues. Its aroma is ample and rounded, rich in vegetable hints of artichoke, chicory and lettuce, together with balsamic tones of mint and rosemary. Elegant and complex in the mouth, it releases spicy notes of black pepper, and the aftertaste is reminiscent of almond and ripe walnut. Strong bitterness and pungency are present and well expressed.
