The Carpellese extra virgin olive oil has a very recent history: Madonna dell'Olivo was founded in 2003 and is appreciated for its production of monovarietal oils obtained from over 2000 olive trees in 6 hectares.
The Madonna dell'Olivo oil is obtained from a continuous cycle oil mill with cold pressing of pitted olives. The particularity of the Madonna dell'Olivo oil mill is the presence of an in-house research laboratory, where single local varieties are monitored.
Tasting Notes
We like Carpellese extra virgin olive oil, because this is a cultivar of particular elegance and delicacy. Notes of herbs and artichoke stand out on the nose and it remains particularly fine. On tasting, bitter and spicy flavors of sage, rocket and artichoke emerge and overall it can be defined as an oil with good structure and intensity.
