Description

Cima di Mola extra virgin olive oil is the creation of the award-winning company Intini in Puglia: this cultivar - overlooked because of difficult harvesting - was lost over time, until Intini started supporting the uniqueness of this tiny fruit with a great potential. Hence this oil that reminds the collective memory of a good and round evo for sensitive palates. Thanks to the dedication of Pietro Intini, the Cima di Mola is back in the limelight with a valuable oil, with incredible characteristics, and more sincerely representative of the cultivar and the territory of origin. A mix of flavors that takes us to the Apulian tables, intent on savoring a seasoned barley frisella just out of the oven;

Tasting Notes

Intini Cima di Mola oil is limpid, with an intense golden yellow color with greenish tones; its aroma is definite and complex, rich in aromatic hints of mint and rosemary, accompanied by elegant spicy notes of black pepper. The mouthfeel is enveloping and vegetable, with ample tones of artichoke and celery, lettuce and wild chicory. Bitterness is strong and spiciness is present and harmonic.

Matching

It is a perfect accompaniment for chickpea appetizers, amberjack carpaccio, ovoli mushroom salads, marinated sea bass, broad bean soups, risotto with shellfish, turbot baked in foil, sea bream tartare, fresh soft cheeses and oven-baked biscuits.
