The passion that the founder of Palazzo di Varignana has always had for the olive tree and for the history of Claterna, have brought this crop - forgotten for centuries - back to its territory. Today, 100 hectares of new olive groves shape the profile of the hills surrounding the resort and give life to a high quality extra virgin olive oil, with intense taste sensations and great aromatic complexity. It is an oil obtained from the olives of the Ghiacciola cultivar only. The olives were harvested between the end of October and the beginning of November.
Tasting Notes
The Ghiacciola “Claterna” extra virgin olive oil has an enveloping aroma with fresh herbaceous scents of artichoke and tomato leaf. The mouthfeel reveals a complexity that ranges from aromatic herbs to green citrus leaves, fresh almond, apple and green olive; the opening is sweet, followed by a sharp spiciness and remarkable persistence.
