In the province of Syracuse, the Galioto family has been working in the olive growing sector for four generations. It is their passion for the work of the olive grower and their attachment to tradition that have allowed this family to produce a high quality oil today.
If the Galioto family's love for olive-growing has been the basic principle since 1952, the year the business began, so has the continuous attention paid to the various stages of production. In fact, the harvest is done by hand with the help of mechanical facilitators, and takes place before the olives reach full maturity; although leading to a lower yield, the quality of the oil benefits.
Tasting notes
Monti Iblei "Castel di Lego" is an extra virgin olive oil obtained from the cultivar Moresca and Tonda Iblea, the certification of Monti Iblei in fact, is recognized only for those oils composed of at least 60% of the variety Moresca. In the aroma there is a very persistent scent of tomato while the taste is mainly sweet with a spicy note.
