Frantoio Gaudenzi
It was 1950 when Vittorio started his own oil mill in Trevi, one of the areas of Italy where the culture of oil is most deeply rooted. We are located in the province of Perugia, in the heart of the PDO Umbria area. Today, his son Francesco and grandsons Stefano and Andrea are in charge of the Gaudenzi oil mill and oil.
Over the years, the oil mill has changed, becoming a modern and technically advanced plant. But the values that guide the family business have remained the same as ever. Every gesture and every choice is made in full respect of the territory and seeking high levels of quality.
The Gaudenzi family's olive groves are located in various plots on the Umbrian hills surrounding Spoleto, at an altitude comprised between 400 and 450 meters above sea level. Many of the 25,000 plants in the family are set in young vines, cultivated by combining tradition and cutting-edge technology in an original way. On the one hand, the olive trees are cultivated by minimizing the use of mechanical tools and carbon dioxide emissions and, on the other hand, Stefano and Andrea have installed a sensor system to monitor and control the plants’ condition and the olives’ flowering or ripening stage remotely.
The cultivars selected and planted by the Gaudenzi brothers for the production of extra virgin olive oil are those most widespread in the area: Leccino, Frantoio and Moraiolo. The fruits are harvested very early: the harvest begins between the end of September and the first days of October and ends by the end of the same month. The Quinta Luna extra virgin olive oil takes its name from the time when the olives are harvested: with the fifth new moon, after the olive trees have blossomed.
