The passion that the founder of Palazzo di Varignana has always had for the olive tree and for the history of Claterna, have brought this crop - forgotten for centuries - back to its territory. Today, 100 hectares of new olive groves shape the profile of the hills surrounding the resort and give life to a high quality extra virgin olive oil, with intense taste sensations and great aromatic complexity. The olives used are of the Leccino, Frantoio and Verzola cultivars, harvested between the end of October and the beginning of November
Tasting Notes
The color is light green. The aroma is ample and aromatic, and recalls the olive at the right degree of ripeness. The taste is intensely fruity, with distinct notes of artichoke, green apple and freshly cut aromatic herbs. The spiciness and bitterness are well balanced
