The oil mill owes its name to the Latomie located inside it: these are the quarries that ancient Greeks left there, after extracting the blocks of tuff rock needed to build their largest western colony, Selinunte. Case di Latomie is one of the very first places in the Mediterranean where the olive tree was cultivated. What fascinates us most about Valle del Belice "Case di Latomie" Centonze extra virgin olive oil is its sweetness. The strong spiciness and bitterness of the Nocellara variety is softened by the fact that the olive trees, being placed on the natural tufaceous rock instead of in the ground, feed on the mineral present in abundance in the tuff, and therefore transfer this particular taste to the olives and to the oil extracted from them.
Tasting Notes
Case di Latomie Valle del Belice Case is limpid, with a beautiful intense golden yellow color and greenish reflections. The nose is elegant and enveloping, rich in scents of medium ripe tomato, white apple and banana, flanked by ample tones of basil and mint, parsley and sage. The mouthfeel is fine and full of character, with notes of broad beans and chicory, lettuce and celery. Very pronounced bitterness and strong spiciness.
