The Cardoncello mushroom (Pleurotus eryngii) is one of the tastiest and most delicious mushrooms. Its flesh is light in color, firm and solid. It has a subtle, elegant fragrance and a sweet, pleasant flavor. Called by different names (Cardoncello, Cardarello, Ferlengo, Ferula), it prefers soils poor in arboreal vegetation and grows wild in the regions of southern Italy, mainly Sardinia, Sicily, Basilicata and Puglia.
The Fratelli Pinna farm processes them with strictly artisanal methods. After being cut with a knife, the mushrooms are immersed in extra virgin olive oil from pitted olives of the Bosana variety, produced by the farm's own oil mill, and preserved 100% natural.
