It is made by blending the ingredients until a sauce of the right consistency is obtained. Whole pine nuts are added, and then it is jarred, corked under vacuum steam and pasteurized. It looks like a creamy green sauce with an intense scent of basil and a delicate flavor.

Serves 6: Boil 450g of pasta, adding a little salt to the cooking water. Empty the pesto into the bowl where you will dress the pasta, put 3 full tablespoons of hot cooking water into the empty jar, cap it, shake it and then pour the contents into the bowl and mix everything together. Pour in the well drained pasta and season to taste with oil and freshly grated Parmesan cheese.
